Flathead Rolls with Cracked Pepper and Peaches

Sometimes I like to try something new and today was a success. With
the fresh flathead fillets I arranged them into rolls held in place
with toothpicks. Seasoned with cracked pepper and salt. Quickly pan
fried with olive oil and served with a garnish of fresh mint and
peach slices. Simple,quick and tasty!
